Asian Cookbook & Rice Noodle Dish


I don't know about you, but sometimes I get unexpected things in the mail from unknown parties. Now... they usually are food-related items, that one is to assume the company would like reviewed here on my blog, or on my podcast.  The Gluten Free Asian Kitchen by Laura B. Russell happens to be one of those fun items. I did not request it, nor was there a note, but as someone who loves to cook I wasn't going to deny the opportunity to try some Asian dishes.

I know quite a few cookbooks have lists about ingredients in the front or back of the book, but this one I actually find very helpful as I am not as familiar with Asian cuisine, and I wouldn't be able to tell you if most mirin or dashi was gluten free or not.  The sauce and snack chapters are fascinating, and I plan to make porcupine balls in the future: don't worry they're just rice and ground pork.  Some of the recipes are very basic and others are a little bit more complex, but I would say overall none of the dishes are overly fancy. Thus far we have tried out stir-fried rice noodles with chicken and peanut sauce. This dish was absolutely delicious and in fact I had to fight my husband for some of the left overs.
