I have about 20 lbs of cranberries in the lower portion of my freezer, so I've been experimenting with a lot of recipes that include cranberries. This time around I made some cranberry orange bars, although I will say it's kind of a cross in taste and texture between a coffee cake and a shortbread cookie bar. In fact, you certainly could make a glaze for this and then it really would be like coffee cake. The orange zest gives it a nice mild zing, and I suppose you could leave out the white chocolate chips and just keep this a fruity dessert, but I had them in the house, so I just threw them in.
Ingredients:
1/2 cup butter
1 cup sugar
3 Tbsp brown sugar
1 egg
2 Tbsp grated orange zest
2 Tsp vanilla
2 cups flour blend (I used Tom Sawyer Flour blend)
1 Tsp xanthan gum
1/2 Tsp baking powder
1 Tsp salt
2 cups fresh cranberries (Although I dare say you could use even more)
3/4 cup white chocolate chips
Directions:
1. Cream together the butter and sugars together.
2. Beat in egg, orange zest, and vanilla.
3. Add in baking powder, salt, and xanthan gum.
4. Slowly mix in your flour blend.
5. Stir in cranberries and white chocolate chips.
6. Spread into a greased 8 X 8 baking pan.
7. Bake for 30-35 minutes at 375 degrees.
