Poke Cake

When I was a little kid my mom would make jello poke cake during the summer. It's quick, easy, and very refreshing. When Gluten Free Specialty got in the Natural Desserts jel dessert I instantly knew that I was going to make poke cake. Some people I mentioned this to never heard of such a thing, so if you've never had this, gluten free or not, you've got to try it. Plus this is perfect for a family gathering during these hot, barbecuing months.

All you need is the following:
1.White Cake Mix, I used Pamela's cake mix.
2. Jel Dessert, any flavor. I used Strawberry.

Bake the cake according to the directions. After cooling for a bit, poke the cake repetitively with a toothpick.

Make the jel dessert according to directions. Pour the liquid into the holes of the cake.

Refrigetate until ready to serve. (It's good to let it sit a few hours before serving).

Serve with whipped topping if desired.

And the verdict from my husband, who is one of those people who had never heard of this before, gave it a solid B. His reasoning was that I needed to poke the middle of the cake better so the middle is as moist as the edges of the cake were. So next time I'm aiming for an A, and there will be a next time.

Ya know, I have had this before but it was a million years ago. I have never made it but remember that it tastes good especially with dairy free whipped cream. I think I ate lemon Poke Cake. Have to try this too!
