Southwestern Chili

I realized I had been neglecting my crockpot a little, so I filled it up with this yummy dish and had my sweety plug it in. Just sprinkle some cheese on top right before you serve, and you've got yourself one hardy and tasty meal.

1 lb lean ground turkey
2 cups chopped onion
1/2 cup chopped green or red peppers
3 cloves garlic, minced
1 cup water
12 oz can tomato paste
14 1/2 oz can diced tomatoes, half drained
1 Tbs prepared mustard
1 tsp chili powder
1 tsp black pepper
1/2 tsp salt
1 tsp cayenne pepper
1/2 tsp ground cumin
15 oz can dark red kidney beans, rinsed and drained
15 oz can black beans, rinsed and drained


Directions:
1 In a very large skillet cook ground beef, onion, sweet pepper, and garlic until meat is brown.
2 Drain off fat.
3 Transfer to a slow cooker.
4 Stir together the water and tomato paste.
5 Then mix in half-drained tomatoes, mustard, chili powder, black pepper, salt, cayenne pepper, cumin, and beans.
6 Add tomato/seasoning mixture to crockpot.
7 Stir to combine.
8 Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.

Preparation time: 30 minutes
Cooking time: 8 hours
