Veggie Quesadillas

A friend and I got together for dinner but we didn't feel like doing anything too involved, so we made veggie quesadillas. We gathered all our supplies and started the process.
We spread cashew cheese on both tortillas, sprinkled with Daiya cheese, then fresh spinach, steamed broccoli, and sandwich it all.
You don't need to much cheese to make this tasty. 
We decided to experiment and make one in the toaster oven and one on the stove top. I personally have not been a big fan of toaster ovens because I always thought if you have a regular oven why the hell do you need a mini oven on your counter.  My opinion has slightly changed over the years, and in our experiment the one in the toaster oven turned out better; the cheese melted more and the edges of the tortilla did not curl like it did on the stove top.
In the end it was quite satisfying.
