Working fruit and vegetables into every meal has been a challenge of mine that I totally killed this week! Instead of your same old buttered rice, a few extra ingredients and I had a great, fresh side. I tweaked a recipe I found on familyfun.com, but basically all you have to do is peel, slice, and chop up an apple, grab some raisins, some fresh chopped almonds and mix. The recipe that inspired me was suggested to be served cold with a little honey, olive oil mixture, but I just added a little squeeze of honey. It was nice to switch it up a little as rice is cheap but can get boring after awhile.
