Redbull & Jager Cupcake Experiment

If you go out to the bar and/or know someone who barhops, then you probably know what a jager bomb is (jagermeister and redbull). Some friends of mine are pretty much spokespeople for jager, and so in honor of their engagement I thought it was the perfect time to experiment in the kitchen, and attempt to make jager cupcakes with redbull frosting- and gluten free too. My husband and I agreed I generally rocked it, and my friends were pleasantly surprised. So what you'll need, you ask?

Pamela's gluten free chocolate cake mix (eggs & oil needed to make this)
1 cup of Jager
1 small can of Redbull
1 lb of powdered sugar
1/2 cup of shortening

Basically, make up the cake mix per directions, use 3 eggs instead of two. Replace 1/2 cup of the liquid it calls for with Jager. Bake per the mixes instructions- cake, cupcakes, whatever. Then let the cake cool, and poke the cake with a toothpick repeatedly. If you've made a pan cake you could just drizzle the other 1/2 cup of Jager over the cake; if you've made cupcakes, you'll want to baste them with the liquor. I basted my cupcakes 4 times over and that seemed to do the trick.

For the frosting, I simply put the shortening, and powdered sugar in a bowl and then slowly added in the redbull while the mix master was on. I ended up using about half the small can of redbull to get the right consistency. Then just frost the cake.

Overall the cake was perfect. For the frosting I would have liked more of a concentrated flavor of redbull, but overall redbull has a somewhat mild flavor, and thus a mild flavor transferred to the frosting. If you chill the cupcakes, the flavor gets slightly stronger, as both beverages are good served super chilled.

Thus in general, my experiment was a success.

Oooh I totally want to try making these! We enjoy Jager and rootbeer as well--maybe a rootbeer flavored icing would go well and have a stronger flavor?
