Only recently have I discovered the wonderful world of artichokes. A couple of years ago I recall being out at a restaurant and someone ordered some sort of artichoke appetizer and I thought it was gross, but then Mike taught me how to cook and eat them, and now I'm making artichoke dip. Sure there are are plenty of recipes out there, but I whipped this up for a party and it seemed to be a hit.
Ingredients
1 can (14 ounce) artichoke hearts, drained and chopped
1 cup mayonnaise
1 cup grated Parmesan cheese
1 clove garlic, minced
Directions
1. Preheat oven to 325 degrees F
2. Combine the artichoke hearts, mayonnaise, Parmesan cheese and garlic.
3. Spread mixture in a oven-proof baking dish and bake in the preheated oven for 35-45 minutes, or until bubbly and golden brown.
4. Serve with crackers, bread sticks, & cucumber slices.
