Peanut Butter Ice Cream Bars

These bars are perfect now that the warmer temperatures are approaching. They are absolutely delicious with or without the fudge sauce!
Crust
1/4 cup butter
1/4 cup chunky peanut butter
1/4 cup brown sugar
1 egg
1 cup GF flour blend
1 tsp xanthan gum
1/2 tsp salt
1/4 tsp baking powder
1/8 tsp baking soda

Ice Cream Layer
1 pint GF vanilla ice cream, softened

Sauce
1/4 cup butter
1/3 cup brown sugar
1/4 cup cocoa powder
1/2 cup heavy cream or soy milk
1/8 tsp salt
2 tbsp peanut butter
1/2 tsp vanilla

Directions
1. Preheat oven to 325 degrees.
2. Grease a 9 inch spingform pan or an 8 X 8 square pan.
3. Combine all crust ingredients and press into the bottom of the pan.
4. Bake 10-12 minutes.
5. Let the crust cool completely.
6. Spread ice cream onto of cooled crust.
7. Cover pan and put in freezer for 4 hours.
8. Make the sauce by combining ingredients in a saucepan.
9. Bring to a simmer, whisk over heat for 3 minutes.
10. Remove from heat and let cool.
11. When bars are ready, wrap a hot towel around the pan to losen the edges.
12. Slice into bars, and transfer to a plate.
13. Drizzle sauce on top.
14. Freeze leftovers.
