Flourless Honey Cake

Flourless cake is something easy to make and is cheaper than some other gluten free desserts because you do not need to use any gluten free flour. I took a risk making a new recipe for a special occasion but it turned out well. It does get dark in the oven but don't worry, it's not burning; it's due to the oil from the nuts as well as the additional oil. The cake is very moist and delicious, but I do like things that are more on the sweet end so I topped it off with some chocolate fudge sauce. However some fresh fruit on top would be a nice touch as well.

Ingredients
2 cups whole almonds or pecans
3 eggs
2/3 cup honey
1/4 cup canola oil
1 Tbsp vanilla extract
1/2 tsp salt
1/4 tsp baking soda

Directions
1. Preheat oven to 350 degrees
2. Grease an 8" spring form pan.
3. Grind nuts in food processor until very fine.
4. Add in all the other ingredients and mix well.
5. Spread batter evenly into the pan.
5. Bake for 35-40 minutes.
