I have a major sweet tooth and thought the idea of combining peanut butter with chocolate sounds like a great mix, considering Reese's got it right, so I whipped up a batch of these cookies. They look like a soft molasses cookie, with the cracked sugar outside, while having the taste of a brownie and the texture of a cake. In other words: Satisfying.
Ingredients
1 1/4 cup GF flour blend (I used tom sawyer blend which already has the xanthan gum in it)
1/3 cup cocoa powder
1/2 tsp baking soda
1/2 tsp xanthan gum
1/4 tsp salt
1/4 cup butter
1/2 cup sugar, extra for rolling
1/2 cup brown sugar
1/3 cup peanut butter
1 large egg
1 tsp vanilla
Directions
1. Preheat oven to 350 degrees, and grease baking sheet.
2. In a medium bowl cream together then butter and both sugars.
3. Mix in the egg and vanilla; mix well.
4. Mix in the peanut butter, cocoa powder, salt, and baking soda.
5. Lastly add in the flour. You may need to add a little water to help with the mixing process.
6. Roll the dough into small balls, about 1 inch in diameter, and roll in extra sugar.
7. Lightly press down each cookie to flatten slightly.
8. Bake for 8-10 minutes.
