Sweet Sadness

I'm always one to find the best deal, and we use alot of turbinado sugar in the house, between regular cooking and Oli's Products production, so I figured buying in bulk was the way to go. I searched high and low and stumbled upon a 50lb bag at my local Cash & Carry. I had been using Sugar in the Raw, and this was C & H brand, but I figured sugar is sugar, right? No....I was wrong.

The C & H brand is processed differently and it does not melt down like the Sugar in the Raw. We boiled and boiled and boiled some more and the sugar granules were still visible. So we had to pitch our batch, but at that point it was just sugar, vinegar, and a few peppers, which wanted to congeal into a taffy-like substance when we removed it from the heat. We were afraid we were going to clog the drain. The moral of this kitchen adventure is that you should always test out something new, even sugar, in a small quantity first.

How frustrating.

I pretty much have found cooking gfcf to be essentially trial and error. Thanks for sharing what happened to you so others can learn from it!

Too bad it didn't work - would have been a good score.. so rare to find "our stuff" marked down!
