I decided to get a little fancy and jazz up our basic side dish of quinoa with butter and make into a beautiful cake, which made me think of making crab cakes, but that's for another day.
Ingredients
1/2 cup quinoa cooked
1 clove garlic, minced
1/2 carrot, shredded
1/4 cup green onions, chopped
1/4 cup diced cheese, optional
salt, pepper, & basil to taste
4 Tbsp breadcrumbs
2 eggs
Olive oil
Directions
1. Cook quinoa according to package instructions.
2. In large bowl mix cooked quinoa, vegetables, spices, breadcrumbs, and cheese into bowl.
3. Add the eggs and mix gently.
4. Use a 1/2 measuring cup as a mold, and form patties with the mixtures.
5. Heat oil in pan, and over medium heat brown patties on each side, taking about 5 minutes per side.
These were yummy, and made a great presentation. They would be even better with a light sauce drizzled over the top; perhaps a lemon butter sauce. I'll have to do that next time.

These really do look tasty. I will have to try this with Millet and see what happens. Anybody have any GOOD Millet recipes let me know.
Ok, I tried making it with Millet for lunch. I am glad I did. I ate 2 of those babies. I left out the diced cheese and added some pretend Parmesan instead. I can't have milk products. I didn't put in a half of a carrot but 1/4 a carrot...I ran out. But they turned out fine! I think maybe for Millet (it is a little tiny dry) I would put in some chopped raisins or dates.
A lemon/raisin sauce would be yummy too.

Did this yet again and left out the cheese and put in a handful of raisins. Great.
