Cream Cheese Pear Pie: A cross between a cheesecake, and a fruit pie, this is an excellent dessert option. I've made this a couple of times, and this time I used pie crust mix, but previously I made up a crust that was pretty good, so I'll share that part of the recipe too.
Ingredients
Crust
1 cup gf graham crumbs
1 Tbsp sugar
4 Tbsp butter, melted
Filling
2 cups ripe pear pieces: peeled, cored, and diced
1/2 cup sugar
1 egg, beaten
1/2 Tbsp cornstarch
1 1/2 pkgs of cream cheese
1 tsp vanilla
Topping (optional)
1/2 cup sugar
1/3 cup GF flour, your choice
3 Tbsp butter
Directions
1. Make crust of your choice.
2. Combine sugar, egg, cornstarch, cream cheese, and vanilla.
3. Stir in pears gently.
4. Spoon into crust.
5. Bake for 25 minutes at 350 degrees.
6. Meanwhile, combine the topping ingredients; sprinkle on the pie and return it to oven for 30 minutes.
My husband was skeptical when he first cut a slice, but after 2 bites he couldn't help shovel it into his mouth because it was just that good. :-)
