I love anything that has baked apples, so I tried out a new recipe for baked apple pie bars. I own some awesome silicon cupcake pans that I like to use, so typically when I'm making any sort of bar recipe, or even cookies that I don't want to form into balls (ie. if I'm feeling lazy), I throw the batter into my cupcake pan. The benefit to a cupcake-shaped item is that you already have a specified serving size and are not cutting a really large piece for yourself; you really think twice about eating that second cupcake--at least I do. The original recipe also called for a frosting, but these were so yummy I didn't find the need of adding extra calories for this go around.
Ingredients
1 small apple, peeled, cored, diced
juice and zest of 1 lemon
1/4 cup butter
1/2 cup brown sugar
1/4 cup sugar
1 egg
1 tsp vanilla
1 cup GF flour mix
1 1/2 tsp apple pie spice
1 tsp xanthan gum
1/2 tsp baking powder
1/2 tsp salt
1/2 cup chopped pecans
Frosting
1/2 cup powdered sugar
3 oz cream cheese
Directions
1. Preheat oven to 350 degrees.
2. Toss apples with lemon juice; set aside.
3. In a medium bowl beat together the butter, sugars, egg, and vanilla.
4. Add in apple pie spice, xathum gum, baking powder, and salt.
5. Mix in your GF flour mix.
6. Stir in apples & pecans.
7. Grease your baking pan.
8. Spread batter evenly into an 8 X 8 pan or us a cupcake pan.
9. Baked 25-35 minutes or until toothpick comes out clean.
10. Enjoy!
