I got Lemons so I made Lemonade

So I had been looking forward to trying this new casserole meal for maybe two weeks, and finally got around to making it. A salsa, chicken, and cheese recipe, and it had rice too, and I popped it into the oven tonight, and went to serve it up..and it just looked nasty. I tried to set that aside; maybe it would taste better than it looked....nope. I haven't made something inedible in a really long time.

Thus my hubby-to-be and I made an emergency visit to Chiptole this evening. And I'm glad we did too. I just love their chips and guacamole. We had a strong rainstorm with thunder and all this afternoon and so it smelt very refreshing outside, which for some reason just makes me giddy. He and I have had many an interesting and cold evening out in the rain, so I guess rainy nights bring out the wacky, yet romantic girl inside of me.

Anyhow, while we were out for dinner I discovered that Mike knows what pi is nine decimals out, had an interesting discussion about mac versus windows and scanning software, and realized I finally had an answer to that inevitable interview question- where do you see yourself in five years? I'd like to be a food and beverage manager for a large hotel if my own personal business isn't already booming. To bring the fun to a close I laughed really hard during a game of thunder thighs under the table. I won, thanks to all my exercising as of late.

On the way out we heard a car alarm going off which totally reminded me of this skit that comedian Dane Cook has about trying to sleep and listening to some annoying neighbor's car alarm go off every night: "Hellooooooooo I'm a car....Gasoline makes me run." (You should check him it, he's just funny). I caught myself singing his song as we walked to the car.

Lastly we discovered through eavesdropping that Chiptole does not skimp on the booze and apparently makes a pretty mean margarita according to some older lady on her way to the airport.

I love random nights like that! Glad to hear you had a fun night, and also glad to hear that something you cooked wasn't perfect...it makes the rest of us average cookers feel better about our selves! LOL!
