Glutino's Cheddar Crackers

The first thing I craved when I switched to the gluten free diet was cheese-its. I just love cheese: bake, fried, melted. I tried several cheese cracker recipes, but they were all lots of work and quite messy to make. I just found Glutino's Cheddar Crackers on the shelf the other day and was super excited. They are good and have a cheddar flavor, but they need more gusto; more cheddar! Also I found them to be a little more crisp than their basic unflavored cracker, almost as if they were over baked by a minute.

So they're yummy as a regular cracker but if you're looking for a true cheese it-like cracker I have found the best solution is covering the bottom of a small skillet with shredded cheese and frying it on medium heat. When the edges of the cheese circle start to get brown, take it off the burner and slide it onto a plate. Let it cool and wallah, crunchy cheese. If it sounds gross, just try it, it's fattening but delicious!
